Though long maligned due to being a white carbohydrate (Oh, the humanity!), potatoes absolutely have a place in a nutritious and weight loss supportive diet. Despite their lack of pigmentation, they have nearly the identical nutrient density as sweet potatoes. They are also the food with the highest score on the Satiety Index, and one of the most important factors for sustainable weight loss is maximizing how much satiety your diet is providing you.
We were originally introduced to green salsa potatoes through Providence, RI based food truck Mijo’s Tacos. Due to its delicious, versatility (pairs well with about 80 percent of the meals we make), and ease of cooking, green salsa potatoes are pretty much the starchy menu item in our house.
The recipe below is our attempt at imitating those life changing taco truck potatoes. I hope you dig it…
Green Salsa Potatoes
4-5 Medium Russet Potatoes (peeled and washed)
1 Cup Tomaltillo Salsa
2 Tablespoons butter
¼ cup water
Pinch of salt
Pan with cover
1) Cut potatoes into bite sized chunks
2) Melt butter in pan – medium heat
3) Once butter is melted, add potatoes
4) Salt potatoes once in pan, add salsa, add water
5) Put cover on, cook about 20 minutes – until fork tender, stirring occasionally.
